Vegetarian Vietnamese yellow curry

3 Tbsp Madras yellow curry ("D&D Gold" brand)
1 Tbsp parve "chicken" soup powder
3 Tbsp sugar
1 Tbsp salt
400 ml coconut milk
cup hot water
1 each onion small, chopped
3 each peeled medium potato, bite size pieces
2 each peeled large carrot, bite size pieces
cup green beans
¾ cup frozen green peas

Preparation steps:
  1. Mix the yellow curry, sugar, salt, soup powder, coconut milk and water in a medium size pot. Bring to boil and turn down the heat.
  2. Add the onion, potatoes, carrots, green beans and green peas and cook for 20 minutes.
Serving: In a soup or pasta dish over steamed rice.

Take note!
  • 400 ml coconut milk - regular size can.
    Preferred brand: Chaokoh
    (brown cover
    with a picture of a white coconut).

    You may add any of the following:
  • 1 lemon grass, finally chopped
  • 8 small mushrooms, cut in half
  • 1 large red bell pepper, bite size pieces
  • 1 cup okra
  • 1 cup basil leaves
