Roasted cauliflower with tahini sauce

Ingredients
 
1 medium cauliflower (2 lbs)
3-4 Tbsp olive oil
¾ tsp salt
 


Preparation steps:
  1. Boil the cauliflower:
    Boil water in a large pot. Submerge the cauliflower (don't remove the green leaves or cut the cauliflower) and cook for 8 minutes.
  2. Remove the cauliflower from the pot and place it in a strainer to drain and cool for 5 minutes.
  3. Prepare for roasting:
    Place the cauliflower on a baking sheet lined up with aluminum foil.
  4. Cover the cauliflower with olive oil and salt, evenly coated on all sides.
  5. Roast uncovered at 440°F for 45 minutes.
Serving: with tahini sauce on the side.
