Recipe serves: 4

Vietnamese yellow curry seafood

1 lbs large shrimps
1/3 lbs mussels
1/3 lbs large scallops, slices in half
400 ml coconut milk
3 Tbsp Madras yellow curry ("D&D Gold" brand)
½ tsp chicken soup powder
3 Tbsp sugar
1 tsp salt
1 cup water
2 each carrot, bite size pieces
1 cup green beans, bite size pieces
½ each onion, chopped
½ cup green peas

Preparation steps:
  1. In a medium pot mix the coconut milk with the yellow curry, chicken soup powder,sugar, salt, and water.
  2. Add the carrot, green beans, onion and green peas. Simmer for 30 minutes.
  3. Add the shrimps, mussels and scallops. Cook additional 5 minutes or until the seafood is ready.
Serving: In a soup or pasta dish over steamed rice.
