Stir-fried shrimp with broccoli

1 lbs large shrimp, raw & peeled
1-1½ lbs broccoli spears
2 Tbsp peanut oil
2 Tbsp water
½ tsp chicken soup powder
1 Tbsp sugar
2 Tbsp stir-fry sauce (Lee Kum Kee - original) or soy sauce
½ cup water
Thickening mix:
1 Tbsp cornstarch
¼ cup water

Preparation steps:
  1. Prepare the ingredients in 4 separate bowls: shrimp, broccoli, seasoning and thickening mix.
  2. Heat a wok, add 1 Tbsp peanut oil and stir-fry the broccoli for 3 minutes on high heat. Add 2 Tbsp water and continue to stir-fry until the broccoli change color to a lighter green, 1-2 additional minutes. Remove the broccoli from the wok and set aside.
  3. Heat the wok again, add the 2nd Tbsp of peanut oil and stir-fry the shrimp until it changes color to pink, about 3 minutes.
  4. Microwave the seasoning mix for 1 minute. Add the broccoli and heated seasoning to the wok. Add the thickening mix. Stir-fry additional 1-2 minutes.

Serving: With steamed rice.
