Walnut and pecan cake

6 each egg white
¼ cup sugar
6 each egg yolk
1 cup sugar
½ cup self rising flour
1 Tbsp vanilla
2 Tbsp brandy
1 cup pecan, ground
2 cup walnut, ground

Preparation steps:
  1. Whip the egg whites with sugar until stiff. Keep refrigerated.
  2. Cream the egg yolks with sugar.
    Add the flour, vanilla and brandy, ground nuts and mix well.
  3. Fold in the egg whites.
  4. Butter a 10-inch diameter cake pan. (26 cm).
  5. Bake at 350F for about 45 minutes.

Take note!
  • Measurements:
    1 cup nuts (prior to grinding) = 4 oz = 100 gram
  • For passover replace the regular flour with mazza flour.
