Pan seared scallops

8 each fresh large sea scallop
2 Tbsp olive oil
salt and black pepper
4 Tbsp olive oil
4 Tbsp lemon juice
4 Tbsp chopped parsley
4 Tbsp chopped red onion
¼ tsp salt
2 each lemon, cut into wedges
1 each small bunch of parsely sprigs

Preparation steps:
  1. Prepare the garnish: in a small bowl mix olive oil, lemon juice, chopped parsley, shopped red onion and salt.
  2. Decorate a large platter with lemon wedges and parsley sprigs.
  3. Gently wash and dry the scallops. Cut each scallop horizontally into two rounds.
  4. In a large pan heat 2 Tbsp of olive oil. Season the scallops with salt and black pepper.
  5. Sear the scallops for 3 minutes on each side on medium heat.
  6. Arrange the scallops on the decorated platter, spoon garnish on top of each scallop.
Serving: with white bread and herbs butter.
