Preparation steps: |
- Prepare the garnish: in a small bowl mix olive oil, lemon juice, chopped parsley, shopped red onion and salt.
- Decorate a large platter with lemon wedges and parsley sprigs.
- Gently wash and dry the scallops. Cut each scallop horizontally into two rounds.
- In a large pan heat 2 Tbsp of olive oil.
Season the scallops with salt and black pepper.
- Sear the scallops for 3 minutes on each side on medium heat.
- Arrange the scallops on the decorated platter, spoon garnish on top of each scallop.
Serving: with white bread and herbs butter.
