Sweet potato with feta

Ingredients
 
1 lbs sweet potato
cup olive oil
¼ tsp salt
 
2 oz feta cheese, crumbled
2-3 Tbsp green onion, chopped
 
2 Tbsp Aroy D Sriracha Chili Sauce
1 Tbsp mayonnaise
 


Preparation steps:
    Prepare the sweet potatoes
  1. Peel the sweet potatoes and cut into ½" slices.
    Cut each slice into cubes, approximately ¾" to 1" in size.
  2. In a large bowl, mix the olive oil and salt.
    Add the sweet potato cubes and toss to coat.
  3. Place the sweet potato cubes in a single layer on a baking sheet lined with parchment paper.
    Roast on the middle shelf at 375°F for 30 minutes.

    Prepare the plate and sauce
  4. While the sweet potatoes are in the oven, arrange the crumbled feta cheese on a large serving plate.
  5. In a small bowl, blend the Aroy D Sriracha Chili Sauce with mayonnaise.
  6. Once the sweet potatoes are ready, spread them over the feta cheese, garnish with green onions, and drizzle with the sauce (may not need all the sauce).

    1 lbs Sweet potato = 1 large Sweet potato
    2 oz feta = 13 cup
