Spicy yam and potato latkes

2 each large yam
½ cup green onion, chopped
1 each serrano chili, minced
1 tsp salt
¼ tsp black pepper
¾ cup self rising flour
2 each medium potato
4 Tbsp oil

Preparation steps:
  1. Peel the yams and cut each one into 6-8 pieces.
  2. In a medium pot cook the yams with water for 20 minutes (count the time from when the yams and water start boiling). Drain the water and let it cool down a few minutes.
  3. In a large bowl mix the green onions, serrano chili, salt, black pepper and cooked yams. Add the flour and mix well.
  4. Peel the potatoes and grate them by hand.
  5. Microwave the grated potatoes on medium heat for 1 minute.
  6. Add the potatoes to the yams and mix well.
  7. In a large non stick pan, heat 1 Tbsp oil.
  8. Fry 6 latkes at a time for 2-4 minutes each side. The yam mix is sticky. Use a Tbsp to put 6 small heaps of the mix in the pan. Use the back of a wet Tbsp to flatten the latkes.
  9. Add 1 Tbsp of oil to the pan before each batch.
Serving: With sour cream on the side.

  • Measurements:
    Yam: 2 large yams = 2 lb
    Potato: 2 medium potatoes = 1 lb
    Green onion: ½ cup = 3-4 green onions
    Serrano chili = 2½ inch long chili
