Preparation steps: |
- Peel the yams and cut each one into 6-8 pieces.
- In a medium pot cook the yams with water for 20 minutes (count the time from when the
yams and water start boiling). Drain the water and let it cool down a few minutes.
- In a large bowl mix the green onions, serrano chili, salt, black pepper and cooked yams.
Add the flour and mix well.
- Peel the potatoes and grate them by hand.
- Microwave the grated potatoes on medium heat for 1 minute.
- Add the potatoes to the yams and mix well.
- In a large non stick pan, heat 1 Tbsp oil.
- Fry 6 latkes at a time for 2-4 minutes each side.
The yam mix is sticky. Use a Tbsp to put 6 small heaps of the mix in the pan. Use the back of a wet Tbsp to flatten the latkes.
- Add 1 Tbsp of oil to the pan before each batch.
Serving: With sour cream on the side.
