Preparation steps: |
- Wash the unpeeled potatoes.
- Cut each potato into 2-6 pieces,
depends on how small the potato is. For 2 lb of small potatoes the yield is 32-45 pieces of potatoes.
- Strip off the rosemary leaves from the woodier stems. Discard the stems.
- In a 10" x 12" pan (or disposable pan) mix all ingredients.
- Roast uncovered at 400° for 45-50 minutes.
Stir the potatoes after 20 minutes of roasting.
Serving: Garnish with fresh rosemary sprigs.
