Roasted small potatoes with rosemary

Ingredients
 
2 lbs small new potato
3 sprig fresh rosemary
¾ tsp salt
1/3 cup olive oil
 


Preparation steps:
  1. Wash the unpeeled potatoes.
  2. Cut each potato into 2-6 pieces, depends on how small the potato is. For 2 lb of small potatoes the yield is 32-45 pieces of potatoes.
  3. Strip off the rosemary leaves from the woodier stems. Discard the stems.
  4. In a 10" x 12" pan (or disposable pan) mix all ingredients.
  5. Roast uncovered at 400° for 45-50 minutes. Stir the potatoes after 20 minutes of roasting.
Serving: Garnish with fresh rosemary sprigs.
