Polish beets

6 medium beets, peeled and halved
2 Tbsp sugar
2 Tbsp lemon juice
2 Tbsp water
¼ tsp salt

Preparation steps:
  1. Cook the beets for 50-60 minutes until they become soft. Strain the beets from the brooth and cool down to room temperature.
  2. In a medium bowl mix the sugar, lemon juice, water and salt.
  3. Cut the beets into small cubes, add to the bowl and mix with the seasoning.
Serving: The Polish beets are good warm or cold.

  • If you don't plan to use the brooth
    for Borscht, you can cook the beets
    washed and unpeeled for an hour and
    then peel the beets. The peel comes
    off very easily this way.
  • Beets easily stain the cutting board
    and your hands.
    You can use disposable gloves and
    a plastic bag to cover the
    cutting board to ease the cleaning.
