Preparation steps: |
- Cut the cauliflower into quarters. Boil the cauliflower for 20-30 minutes
until soft.
Drain the water and let it cool down a few minutes.
- In a large bowl, mix the eggs, soup powder, sugar, salt and hot chili powder.
Add the flour and mix well. Add the cauliflower and stir gently, not to mush the cauliflower
pieces too much.
- Shape the mix into latkes: 2-3 inch wide and about ½ inch tall.
- In a non stick pan, heat 1-2 Tbsp oil. Fry 5 latkes at a time for 5 minutes each side.
Add 1-2 Tbsp of oil to the pan before each batch.

It sure became a hit in our kitchen. Guy, my son, suggested to spice it up,
so our recipe has an added hot chili powder.
