Preparation steps: |
- Saute the onions until golden color, 3-5 minutes.
- Transfer the onions to a large pot. Add all ingredients and bring to boil. Lower the heat
and simmer for 1½ hours. Mix every 30 minutes.
- Process in the blender in 2 batches.
- If the soup needs to be reheated, add water and adjust flavors.
Serving: Bring the frozen peas to room temperature. Add 1-2 Tbsp of peas to each serving.
Alternatively, add the frozen peas to the soup pot just before serving.
Garnish with soup croutons.
