Recipe serves: 8-12

Split pea soup

1 each large onion, minced
2 Tbsp oil
1 lbs green split peas, rinsed
8 cup water
4 Tbsp mushroom soup powder
1 tsp salt
¼ tsp black pepper
½ lbs frozen peas
Garnish: soup croutons.

Preparation steps:
  1. Saute the onions until golden color, 3-5 minutes.
  2. Transfer the onions to a large pot. Add all ingredients and bring to boil. Lower the heat and simmer for 2 hours. Mix every 30 minutes.
  3. Process in the blender in 2 batches.
  4. If the soup needs to be reheated, add water and adjust flavors.
Serving: Bring the frozen peas to room temperature. Add 1-2 Tbsp of peas to each serving. Alternatively, add the frozen peas to the soup pot just before serving.

Garnish with soup croutons.
