Baby spinach with bell pepper and cucumber salad

6 oz baby spinach leaves
¾ each large bell pepper (red, yellow or orange), chopped
1 each medium cucumber, chopped
Salad dressing
½ tsp orange zest
¼ tsp salt
1/8 tsp black pepper
1 tsp honey
3 Tbsp olive oil
3 Tbsp lemon juice
¼ each serrano chili, seeded and minced
1 each medium garlic clove, minced

Preparation steps:
  1. Prepare the salad dressing.
  2. Mix the vegetables in a large bowl and add the salad dressing.

  • Measurements:
    Baby spinach: 6 oz = 170 gram = about 4 cups

  • substitute the spinach with large romaine lettuce.
