Potatoes salad with pickles and green peas

Ingredients
 
5 each medium Russet potato
1 each green peas can (15 oz)
8 each baby pickles, chopped
 
5 Tbsp mayonnaise
¼ tsp salt
tsp black pepper (optional)
 


Preparation steps:
  1. Microwave the washed and unpeeled potatoes.
    Microwave 2-3 potatoes at a time in a sealed plastic bag for 5 minutes on medium heat. Cool down, peel and cut into cubes. If the cubes are not ready, microwave them additional 1-2 minutes.
  2. In a large bowl mix the pickles with mayonnaise, salt and black pepper (optional).
  3. Gently add the green peas.
  4. Gently add the potato cubes.
Serving: room temperature or cold.

Take note!
  • Potatoes: 5 medium = 2.5 lbs


Alternatives:
  • Warm potatoes salad:
    prepare all steps but the last one of adding
    the potatoes. Before serving the salad, warm
    the potatoes cubes for 1 minute in the
    microwave. Gently add to the mix and serve
    immediately.
