Recipe serves: 2 main dishes or 4 appetizers

Mixed greens with tomato and blue cheese

Ingredients
 
4 oz mixed baby greens (spring mix)
4-6 each campari tomato, chopped
2-3 Tbsp red onion, thinly chopped
3 oz blue cheese, crumbled
 
Salad dressing
1 tsp mustard
2 Tbsp olive oil
Tbsp fig dark balsamic vinegar
 


Preparation steps:
  1. Whisk the salad dressing ingredients vigorously until smooth and well combined, about 30 seconds.
  2. Optional: If the green leaves are large, chop them into bite-sized pieces.
  3. In a large bowl, toss the green leaves, tomatoes, red onion, blue chesse, and salad dressing.

  • Mixed greens measurements:
    4 oz = about 4 cups

  • Fig dark balsamic - I use
    Affamata Newburyport.
    Fig Dark Balsamic Vinegar.
    It can be substituted with regular
    balsamic vinegar.

  • Blue cheese recommended brand:
    Trader Joe's Cave-Aged Blue Cheese
    or high quality Gorgonzola.
