Recipe serves 4

Corn, zucchini and bell pepper salad

2 each fresh sweet white corn ears
1 each medium zucchini, diced
½ each medium bell pepper, diced
2 Tbsp fresh basil leaves chopped (optional)
1 tsp fresh dill, minced
3 Tbsp fresh lemon juice
1 Tbsp olive oil
¼ tsp salt
tsp black pepper

Preparation steps:
  1. Remove the husks and silk of the corn ears. Stand the corn ears in a large bowl, and use a sharp knife to remove the kernels from the cob.
  2. Add the rest of the ingredients and mix well.
