Beet and arugula platter

Ingredients
 
2-3 each medium beet, peeled and cooked
2-3 oz baby arugula leaves
4 each small tomato, cut to small pieces
2 oz goat cheese
 
2 Tbsp lemon juice
2 Tbsp olive oil
1 Tbsp water
tsp salt
 


Preparation steps:
  1. Half and then slice the beets. Arrange the beets on a large platter.
  2. In a large bowl mix the salad dressing.
  3. Add the arugula to the bowl, toss with the salad dressing. Use two table spoons to place the arugula in the middle of the platter. Leave the salad dressing in the large bowl.
  4. Add the tomatoes to the bowl, toss with the salad dressing. Use two table spoons to place the tomatoes on the arugula.
  5. Garnish with pieces of the goat cheese.
  6. Drizzle the salad dressing on the beets.

  • Baby arugula measurements:
    2-3 oz = 60-85 gram
