Arugula with oranges, beets and goat cheese salad

Ingredients
 
5 oz baby arugula leaves
2-3 each naval organge
2-3 each medium beet, peeled and cooked
4 oz goat cheese
 
4 Tbsp olive oil (Toscano)
4 Tbsp balsamic vinegar (Modena)
1 tsp Dijon mustard
 


Preparation steps:
  1. Peel the oranges using a sharp knife and cut into small pieaces.
  2. Cut the beets into small pieaces.
  3. In a large bowl mix the arugula with oranges and beets.
  4. Prepare the salad dressing from olive oil, balsamic vinegar and mustard.
  5. Add the salad dressing to the salad and mix well.
  6. Arrange on individual plates
  7. Garnish with pieaces of the goat cheese.
