Wild rice with onion

Ingredients
 
2 each medium onion, chopped
2 Tbsp oil
 
1 cup wild rice mix:
50% Jasmine rice
30% Red cargo rice
20% Black glutinous rice
 
cup hot water
Tbsp chicken soup powder
¼ tsp salt
 


Preparation steps:
  1. Sauté the onions: Heat oil in a non-stick pan over medium heat. Add the chopped onions and sauté until light brown, about 15 minutes.
  2. Combine ingredients: Place the rice mix in a medium pot and rinse with water.
    Add sautéed onions, water, chicken soup powder, and salt to the pot with the rice.
  3. Simmer the rice: Bring the mixture to a simmer. Cover and cook for 45 minutes.
  4. Stir the rice: Gently stir the rice once during simmering and a second time after 45 minutes.
  5. Let it stand: Turn off the heat and let the rice stand, covered, for an additional 15 minutes before serving.

Take note:
  • To prepare the rice mix:
    Pour 1/3 cup of red rice into a ½ cup
    measuring cup.
    Add black rice to fill the rest of
    the ½ cup.
    Transfer the mix to a small bowl and
    add ½ cup of Jasmine rice.
    Mix the three rice types
  • Brands:
    Red cargo rice - Asian Taste (Thailand)
    Black glutinous rice - Tawa (Taiwan)
Alternatives:
  • Sugat mix rice, which contains
    33% red rice
    33% brown rice
    33% long grain rice

    This mix requires a longer cooking of
    60 minutes.
    After 60 minutes of cooking,
    turn off the heat and let the rice stand
    uncovered an additional 10-15
    minutes before serving.
