Udon noodles with onion and ginger

8 oz udon noodles
1 each medium onion, diced
1 tsp vegetable oil
Tbsp soy sauce
Tbsp oyster sauce
¼ tsp salt
tsp hot chilli
½ tsp ginger, minced
½ tsp sugar, optional
1/3 cup water

Preparation steps:
  1. Cook the Udon noodles (per package instructions), set aside.
  2. In a wok, stir fry the onion with oil until golden brown (about 6 minutes).
  3. Add soy sauce, oyster sauce, salt , hot chilli, ginger, sugar, Udon noodles and water.
  4. Stir frequently until the sauce, noodles and onions are hot.

    Note - the Korean noodles are sweeter than the Japanese ones. Add 1 tsp of sugar when using the Japanese kind noodles.
