Rice with green peas and dill

Ingredients
 
1 each large onion, chopped
1 Tbsp oil
 
1 cup basmati rice or long grain rice
2 Tbsp oil
 
cup hot water
1 cup frozen green peas
1 Tbsp chicken soup powder
½ tsp salt
tsp black pepper
1-2 Tbsp fresh dill, minced
 


Preparation steps:
  1. Saute the onion in a non-stick pan until caramelized (light brown).
  2. Rinse the rice and then soak it in water in a medium-sized pot for 20-30 minutes. Drain the water by tilting the pot on its side and pouring out as much water as possible
  3. Add 2 Tbsp oil and saute the rice for 2 minutes until all the water evaporates.
  4. Add water, green peas, fried onion, chicken soup powder, salt, black pepper, and dill.
  5. Bring to simmer. Simmer covered for about 10 minutes or until all the water is absorbed. Turn off the heat, gently fluff the rice with a spoon, and let it stand for another 15-30 minutes.
