Middle Eastern broiled chicken skewers

Ingredients
 
2 lbs chicken thigh meat (boneless, skinless)
 
Marinade
¼ cup olive oil
¼ cup lemon juice
2 Tbsp kabab spice
½ tsp salt
 


Preparation steps:
  1. Prepare the marinade in a large bowl. Cut the chicken into large bite pieces and add to the marinade. Mix well. Marinade the chicken for 45 minutes.
  2. Prepare the chicken skewers (8-16 skewers, depends on the length of the skewers). Place the skewers on a baking tray (baking sheet) lined with aluminum foil.
  3. Turn the oven broiler on high. Place the tray with the chicken on the second from the top rack.
  4. Broil for 4 minutes. Remove from the oven, flip the skewers and broil additional 4 minutes. Carefully remove from the oven (the tray fills up with liquids).
