Preparation steps: |
- Mix the marinade of honey, soy sauce, chilli powder, cumin powder, chicken soup powder,
hot water and salt in a disposable 10" x 12" roasting pan.
- Marinade the chicken in roasting pan for 2-3 hours.
- Cover with aluminum foil.
- Roast at 375° for 1 hour.
- Peel the potatoes and cut each to 4 pieces. Sprinkle the potatoes with salt.
- In the roasting pan arrange the potatoes and the dried fruit on the bottom, under the chicken drumsticks.
- Cover again with aluminum foil.
- Roast at 400° for additional 1 hour.
Serving: Serve with steamed rice and garnish with fresh parsley leaves.
