Chicken with dried fruit

3-4 lbs chicken drumsticks, skin removed
¼ cup honey
¼ cup soy sauce
¼ tsp hot chili powder
1 tsp salt
½ tsp chicken soup powder
1 cup hot water
14 each dried prunes
14 each dried apricots
4 each medium potato, peeled & cut into large slices

Preparation steps:
  1. Mix the marinade of honey, soy sauce, chilli powder, cumin powder, chicken soup powder, hot water and salt in a disposable 10" x 12" roasting pan.
  2. Marinade the chicken in roasting pan for 2-3 hours.
  3. Cover with aluminum foil.
  4. Roast at 375° for 1 hour.
  5. Peel the potatoes and cut each to 4 pieces. Sprinkle the potatoes with salt.
  6. In the roasting pan arrange the potatoes and the dried fruit on the bottom, under the chicken drumsticks.
  7. Cover again with aluminum foil.
  8. Roast at 400° for additional 1 hour.
Serving: Serve with steamed rice and garnish with fresh parsley leaves.

Take note!
  • 3-4 lbs chicken drumsticks: 12 - 14 pieces

  • Use skinned and unboned chicken thighs
    instead of the chicken drumsticks.
