Preparation steps: |
- In a large bowl, mix all the chicken meatball ingredients (except olive oil). Place the mixture in the freezer for 5 minutes.
- Shape the mixture into about 22-28 small meatballs (about the size of falafel) and place them on two parchment lined baking sheets.
- Brush the meatballs with olive oil.
- Bake at 350°F on a middle-high oven rack for 15 minutes.
- Remove from the oven, flip the meatballs, brush lightly with olive oil again, and
bake additional 15 minutes.
