Baked chicken meatballs

Ingredients
 
1 lbs ground chicken
1 each small onion, finely chopped
¼ cup bread crumbs
1 each large egg
tsp baking soda
1 ¼ Tbsp chicken soup powder
2 Tbsp ketchup
¼ tsp salt
1 large potato, grated (optional)
olive oil
 


Preparation steps:
  1. In a large bowl, mix all the chicken meatball ingredients (except olive oil). Place the mixture in the freezer for 5 minutes.
  2. Shape the mixture into about 22-28 small meatballs (about the size of falafel) and place them on two parchment lined baking sheets.
  3. Brush the meatballs with olive oil.
  4. Bake at 350°F on a middle-high oven rack for 15 minutes.
  5. Remove from the oven, flip the meatballs, brush lightly with olive oil again, and
    bake additional 15 minutes.
