Grilled Alaskan halibut

2-3 lbs Alaskan halibut (¾-1¼ inch thick)
¼ tsp black pepper
¼ tsp salt
¼ cup soy sauce
¼ cup olive oil (Toscano)
¾ cup balsamic vinegar (Modena)

Preparation steps:
  1. Marinade the halibut with soy sauce, olive oil and balsamic vinegar. Rub the black pepper and salt on both sides of the fish. Set aside for 1 hour.

  2. Heat the BBQ for 10-15 minutes. Reduce heat.
  3. Grill the halibut for 12-16 minutes on low heat. Add marinade and flip it a couple of times during grilling.
Serving: with sliced lemon on the side.

  • During the grilling place an iron box
    with apple wood chips in the BBQ to
    add smoked flavor to the fish.
