Baked tilapia with mushrooms

4 6 oz Tilapia fillet
3 Tbsp olive oil
tsp Old Bay Seasoning
1 lbs sliced fresh mushrooms
1/3 cup red onion, chopped
2 Tbsp canola oil
1 tsp chicken soup powder
½ each lemon
¼ tsp salt
5 Tbsp parsley chopped (including garnish)

Preparation steps:
  1. Rinse the fish. Arrange in a baking dish in one layer and season with olive oil and Old Bay Seasoning on both sides.
  2. Bake the fish covered at 350F for 25 minutes.
  3. Saute the mushrooms and red onion with the canola oil in a large skillet for 10 - 15 minutes until the mushrooms are browned, add the chicken soup powder.
  4. Once the fish is baked, squeeze the lemon on top of the fish, season with salt. Cover the fish with the mix of mushrooms.
Serving: Sprinkle fresh parsley and serve.
