Thai sticky rice with mango

1 cup sweet rice
1 cup water
¼ cup coconut milk
¾ cup water
½ cup sugar
¼ tsp salt
½ cup coconut milk
3 each small mango, peeled and cut into cubes
6 sprig fresh mint
2 tsp toasted sesame seeds

Preparation steps:
    1. in a medium size pot, soak the sweet rice with 1 cup of water for 30 minutes to 2 hours.
    2. Add ¼ cup coconut milk and ¾ cup water. Turn on the heat and bring to simmer. Cover the pot and simmer for 15 minutes. Remove the pot cover and set aside for 15 minutes.
    3. While the rice is cooking prepare the coconut mix: in a small size bowl mix the sugar, salt and ½ cup coconut milk.
    4. After the rice was set aside for 15 minutes, pour the coconut mix into the pot and mix it with the rice.


      Serve warm or in room temperature. Place the sticky rice and mango on individual plates.
      Sprinkle the rice with sesame seeds and decorate with mint leaves.
