Preparation steps: |
- in a medium size pot, soak the sweet rice with 1 cup of water for 30 minutes to 2 hours.
- Add ¼ cup coconut milk and ¾ cup water. Turn on the heat and bring to simmer. Cover the pot and
simmer for 15 minutes. Remove the pot cover and set aside for 15 minutes.
- While the rice is cooking prepare the coconut mix:
in a small size bowl mix the sugar, salt and ½ cup coconut milk.
- After the rice was set aside for 15 minutes, pour the coconut mix into the pot and mix it with the rice.
Serving:
Serve warm or in room temperature. Place the sticky rice and mango on individual plates.
Sprinkle the rice with sesame seeds and decorate with mint leaves.
