Almond cookies

2 cup unsalted butter (4 sticks) - room temperature
1 cup powdered sugar
4 cup self rising flour
cup almonds , chopped thinly
1 Tbsp vanilla
powdered sugar

Preparation steps:
  1. Mix all ingredients in a large bowl. The dough becomes smooth and easy to handle.
  2. Form 1"-1½" balls, place on a baking sheet.
  3. Bake at 300F for 30 minutes on top shelf until pale golden. This way the cookies bake evenly and don't get burnt on the bottom.
  4. Remove from oven and transfer to a cooling tray. Sprinkle powdered sugar.
  5. Cool down to room temperature and store in a container.

Take note!
  • Measurement:
    2 cup = 16 oz = 1 lbs = 453 gram butter

  • For a softer texture replace 1¼ cup almonds with 2 cups pecans. (about 8 oz pecans)
