Zucchini bread

Ingredients
 
3 each eggs
2 cup sugar
1 cup oil
 
1 Tbsp cinnamon
1 Tbsp vanilla
½ tsp baking soda
¼ tsp baking powder
¼ cup dry poppy seeds
 
3 cup self rising flour
3 cup zucchini, grated
 


Preparation steps:
  1. Beat eggs, sugar and oil.
  2. Add cinnamon, vanilla, baking soda, baking powder and poppy seeds. Mix well.
  3. Stir in the flour and zucchini in several batches.
  4. Grease 2 glass pans (9"x5") and bake at 315F for 1 hour and 20 minutes.
  5. Check the breads and if not ready bake additional 5-10 minutes. Bake on the middle shelf of the oven.

Take note!
  • 4 medium zucchini make 3 cups of
    grated zucchini.
  • Dry poppy seeds:
     ¼ cup = 1.35 oz = 38 gram

    multiply ingredients by 1.5 (use 5 eggs).
