Preparation steps: |
- Peel the pears, remove the core and cut into small cubes.
- In a small bowl soak the pear cubes with brandy for 15-30 minutes.
- In a large bowl cream the eggs and sugar. Add the oil, cinnamon and vanilla and continue to cream.
- Add the flour and mix.
- Add the pears and brandy and the chopped walnuts. Mix well.
- Grease 2 pans (9"x5") and bake at 325F for 50 minutes.
