Morning Glory muffins

Ingredients
 
½ cup golden raisins
½ cup hot water
 
3 each large egg
1 cup golden brown sugar
¾ cup oil
1 Tbsp cinnamon
1 Tbsp vanilla
1 tsp baking soda
¼ tsp salt
 
3 each medium carrot, peeled and grated
1 each large grand smith apple, peeled, cored and grated
½ cup sweetened shredded coconut
½ cup walnuts, chopped
¼ cup milk
 
2 cup self rising flour
 


Preparation steps:
  1. In a small bowl cover the raisins with hot water and set aside.
  2. Beat the eggs, sugar and oil, and add cinnamon, vanilla, baking soda and salt. Mix well.
  3. Mix in the carrots, apple, coconut and walnuts.
  4. Drain the raisins and add them and the milk to the mix.
  5. Stir in the flour in 2 batches.
  6. Divide the batter into 15 muffins cups Bake at 375F for 25 minutes.
