Honey cake

Ingredients
 
4 each large egg
 
1 cup sugar
1 Tbsp baking powder
1 Tbsp ground cinnamon
¾ cup honey
2 Tbsp brandy
 
2 ½ cup self rising flour
½ cup oil
 
1 Tbsp Nescafé
¾ cup warm water
 


Preparation steps:
  1. Separate the eggs and let them sit at room temperature for 30 minutes.
    Whip the egg whites until soft peaks form.
  2. Prepare the coffee using Nescafé and water..
  3. Cream the egg yolks, then add the sugar, baking powder, ground cinnamon, honey, and brandy.
  4. Gradually add the flour, oil, and coffee, mixing well.
  5. Gently fold in the egg whites.
  6. Oil 2 glass pans (9"x5") and bake at
    300°F for 60-70 minutes.

Background:
This is a traditional "Rosh Hashana" cake.


Alternatives:
  • Substitute the Nescafé and water
    with 1/8 cup of espresso with water
    to fill 3/4 cup.
