Honey cake

Ingredients
 
2 ½ cup self rising flour
1 cup sugar
1 Tbsp baking powder
1 Tbsp ground cinnamon
 
¾ cup honey
½ cup oil
4 each egg yolk
2 Tbsp brandy
 
1 Tbsp nes cafe
¾ cup warm water
 
4 each egg white
 


Preparation steps:
  1. Whip the egg whites and keep refrigerated.
  2. Prepare the coffee from the nes cafe and water.
  3. Cream the egg yolks, sugar, baking powder, ground cinnamon, honey and brandy.
  4. Gradualy add flour, oil and coffee. Mix well.
  5. Fold in the egg whites.
  6. Grease 2 glass pans (9"x5") and bake at 300F for 60 minutes.

Background:
This is a traditional "Rosh Hashana" cake.


Alternatives:
  • Substitute the nes cafe and hot water
    with 1/8 cup of espresso with water
    to fill 3/4 cup.
