Preparation steps: |
- In a large bowl, do not peel the apples; instead, remove the core and cut them into small pieces. Mix in the brown sugar.
- In another large bowl, using a mixer, beat the eggs. Add the sugar, followed by the oil, cinnamon, and vanilla. Continue mixing until well blended.
- Add one cup of sifted flour and baking powder to the mixture, continuing to blend with the mixer until smooth. Then, incorporate the second cup of flour using a spoon.
- Stir in the apple pieces.
- Grease a 10½-inch diameter cake pan (26 cm) with oil.
Bake at 350°F for 45 minutes.
