Cranberry orange cake

7 each large egg
½ cup sugar
½ cup brown sugar
1 each grated peel of a small orange
6 Tbsp frozen concentrated orange juice
1 cup unsalted butter (2 sticks) - melted
cup self rising flour
1 lbs frozen unsweetened cranberry
1 cup sugar
1 cup water
powdered sugar

Preparation steps:
  1. In a large bowl beat the eggs for 2 minutes. Add ½ cup sugar, ½ cup brown sugar, grated peel and frozen orange juice. Continue beating additional 2 minutes.
  2. While continue to beat the mix, gradually add the flour and melted butter.
  3. In a medium size pot bring to boil the cranberry, sugar and water. Lower the heat and cook additional 5 minutes. Cool down for 5-10 minutes and then add the cranberry to the mix.
  4. Oil a 10" x 14" baking dish. (Pyrex)
    Transfer the mix to the baking dish.
  5. Bake at 370F for 35-40 minutes. Cake is ready when the bottom is pale golden.
  6. Cool down and sprinkle powdered sugar.
