Preparation steps: |
Prepare the sweet potato
- Peel the sweet potato and cut into ½" slices.
Dice the slices into cubes, approximately ¾" - 1" in size.
- In a large bowl, mix the olive oil and salt.
Add the sweet potato cubes and toss to coat evenly.
- Spread the cubes in a single layer on a baking sheet lined with parchment paper.
Roast on the middle rack at 375°F for 30-35 minutes.
Sweet potato cubes can be prepared
a few hours ahead and warmed in the microwave for 45 seconds before serving.
Prepare the plate and sauce
- While the sweet potatoes roast, arrange the crumbled feta cheese on a large serving plate.
- In a small bowl, blend the Aroy D Sriracha Chili Sauce with mayonnaise.
- Once the sweet potatoes are done, layer them over the feta cheese.
- Garnish with chopped green onions, and drizzle with the sauce (may not need all the sauce).
