Grilled honey mustard shrimp

2 lbs large shrimp
¼ cup olive oil
3 Tbsp honey
2 Tbsp yellow mustard
2 each large garlic clove, minced
¼ tsp salt
1 tsp red pepper flakes
¼ cup fresh basil, cut thinly (optional)

Preparation steps:
  1. Peel the shrimp leaving the tails on and devein them.
  2. Combine marinade ingredients in a large bowl.
  3. Add the shrimp and mix.
  4. Marinade for 1 hour or refrigerate for up to overnight.
  5. Grill the shrimp on a medium-high heat for 2 minutes on each side.
Serving: Serve on a plater decorated with baby spinach leaves.

I've learned this recipe from my friend Kim who uses the same marinade for grilling salmon.

  • Large shrimp - 21 to 25 per pound

  • Broil on medium-high heat for 2½ minutes
    on each side instead of grilling.
